Default spectator ions

Hi can someone please explain how to find out spectator ions?
I know they are ions which do not change in a reaction, but i don't really know which ones are which.
eg. HCL+NaOH = NaCl + H2O
The book says that Cl and Na are spectator ions, but they did change in a reaction. From HCl it became NaCl. So i dont exactly understand it.
