Default Assay times???

hello everyone!!

I was wondering if anyone know how you come up with a time for an enzyme assay??

For example lets say a certain enzyme assay is estimated to take 30 minutes. How did one come up with the time=30minutes??


Any takes??

I guess it all depend on how much you know about the enzyme
