Your molecular formula for acrylic acid is correct. It's an acid with a pKa of 4.25, which is between the pKa of succinic and benzoic acids. It's relatively a weak acid.

pH is nothing but hydrogen ion concentration in a solution.
pH = -log[H+].

There are many methods available to determine pH; of which pH meter is one. There are pH papers available that can be used to monitor change in pH during a chemical reaction.
